As I already told you, I’ve been in a Valentines mood for quite a while… And my adored cousin mentioned she wanted to bake Soufouf (or Sfouf) so I decided to post this recipe for her… Toubs, I know you are reading and I hope you will smile when seeing the heart shaped little cakes with almonds (because you like them)and pine nuts. (For those of you that don’t know this cake, it’s a Lebanese specialty that is usually cut in squares and that has less pine nuts than as seen here in the picture).
Ingredients:
- 4 cups of flour
- 1 cup of olive oil
- 1 TBL of Anise powder
- 1 TBL of Saffron
- 1 TBL of Baking Powder
- 2 cups of sugar
- 1 cup of water
- 1 TBL sesame oil (Tahina)
- 1 egg yolk (to shine)
- cognac (optional)
- pine nuts (as much as you like) usually 1/3 cup is enough. I like it with more
Procedures:
- Preheat the oven at 200C
- Mix all the ingredients together (except for the sugar)
- Mix sugar + water, and add this mix to the flour mix
- on a big mold, put a bit of sesame oil (Tahina) and spread the mix
- Beat the egg yolk with the cognac (if available) and spread on top pf the mix
- Add the pine nuts on top
- Cook for 20minutes
- Enjoy the yummy Soufouf with a moist texture (on top), like you like them Toubs =)
